We guarantee that all of the beef is 100% grass-fed and grass-finished. Cattle is raised completely on pasture, free to roam and graze naturally, and fed a diet of pesticide-free grass. They are never fed grain or added hormones.

Pasture Raised:
All of the animals are raised completely on pasture and can roam around as they please. Poultry and Pigs are also supplemented with non-GMO feed. No Antibiotics, and no added hormones.

This time last year, Jeremiah Soucie and his wife, Sarah Waterson, alongside her brother, Michael, and his partner, Maria Hristova, took over 66 Gilead Distillery, which sits on an 80-acre heritage farm in Bloomfield, Ont. Rebranded as Kinsip House of Fine Spirits, it is more than just a craft distillery, producing grain-based spirits — vodka, gin, whisky and shōchū. Soucie and his partners have been busy carefully creating new recipes for their growing line of bitters — the alcohol-based, botanically infused flavouring agents that were historically used for medicinal purposes. Designed with the bartender in mind, Soucie has also come to appreciate that “there are no rules when it comes to playing with bitters, but there are a few guidelines.” Well-suited for light and dark spirits, Kinsip’s house and orange bitters are what Soucie calls a “bartender’s salt and pepper.” Perfect for the home bar, just a dash makes every cocktail better (not bitter) and more complex. Just don't call it medicine.

Ontario Honey Creations & Meadery

Ontario Honey Creations is a family owned and operated beekeeping business, specializing in seasonal terroir honey, artisanal honey vinegars, and Meads. Peter Chorabik and Sarah Allinson-Chorabik, dedicated to providing 100% raw and unpasteurized honey from their own bee yards located throughout the GTA. Current bee yard locations can be found throughout Toronto, Headwaters and Rouge Valley region. 

Ontario Honey Creations beekeeping experience began in 2012 when Peter decided to follow in the footsteps of three generations of beekeepers before him. They started with two hives and had the desire to expand their apiary. Peter and Sarah began posting ads on a classified site for free honeybee swarm removal services. They were quickly amazed by the demand. As an alternative to calling an exterminator, they founded their sister company Toronto Bee Rescue, which focuses on humane honey bee removals.

Their beekeeping hobby grew quickly, and by 2015 they had 120 hives. It was at this point that Sarah decided to leave corporate life behind and focus on building Ontario Honey Creations to share their delicious honey. By 2018, with over 400 hives, Peter left corporate life as well to transition to a full-time beekeeper. Since then, they have been dedicated to growing their apiaries and sharing their honey products with all of you.

In 2020, they moved their family to their new farm in Mulmur on Airport Road where they quickly expanded with chickens, turkeys, and their beloved KuneKune pigs. Peter and Sarah look forward to inviting you to their farm this summer so you can experience the art of beekeeping, learn more about honeybees and get to meet their adorable KuneKune pigs.

Spirit in Niagara Small Batch Distillery was founded by Arnie Lepp, whose family has been farming for 4 generations. They care for over 200 acres of Tender Fruit, seedless grapes and vinifera grapes and are the owner of the largest single family tender fruit shipping company in Ontario, amalgamated from 5 other independent shippers.

Spirit in Niagara loves peaches, nectarines, yellow plums, blue plums, pears, apricots and cherries – the 7 major fruits in Niagara – and use these to make their special small batch spirits.

Reducing waste with incredible taste.

10% of Niagara tender fruits are wasted each year (calculated as 30,500 tonnes production x 10%= 3,050 tonnes a year. Each tonne can yield up to 700 litres of juice; each litre of juice can be fermented to 10% to 14% and amounting to over 70 litres of alcohol. Our objective is to reduce fruit waste disposal problems and produce a value added spirit product. Only the ripest fruit is selected.

Domestically and throughout North America over the past 5 years, the development of products such as flavoured spirits, premium spirits and coolers have revived interest in spirits. Younger alcohol beverage consumers have developed a more mature taste profile which typically includes spirits as well as wine and craft beer. There has been a noticeable trend back to cocktail consumption. Most fruit based spirits consumed in Canada are imported. All other small batch distillers in Ontario focus on grain or potato based spirits.

A.J. Lepp Orchards has access to significant volumes of wasted tender fruit from its orchard operations and from the custom packing operations at Niagara Orchard & Vineyard Corp. and the growers that deliver fresh fruit for distribution.

Pelee Island Pavilion is the hub of activity on the island during the spring, summer and fall. Tour the Pavilion grounds and learn the history of Pelee Island and Pelee Island Winery. The wine appreciation seminar is known as the ‘Vine to Wine’ process. Reif Estate Winery

One of Niagara-on-the-Lake's founding family wineries, founded in 1982 by Ewald Reif and later acquired by nephew Klaus W. Reif. Today, Reif produces wines from its vineyard first planted in 1977. Our 125 acre farm is located in the Niagara River sub-appellation where sun-loving grape varieties grow best. The easterly facing slopes and long growing season are moderated by the river as air currents ward off early spring and late fall frosts.

Our vineyard is located in Ontario's warmest sub-appellation, ideal for the production of rich full-bodied wines. But time matters too. Our farm is also home to some of the oldest vinifera plantings in Canada, a benefit to growers in cooler climates like Ontario, as mature vines ripen earlier. Being tucked beneath the Escarpment offers our vineyards a longer season that allow grapes more time to ripen and cooler nights that help intensify flavours. The grapes they grow on their beautiful little piece of the Beamsville Bench tend to steal the show. That’s why all Thirty Bench wines are made exclusively with grapes from their own vineyards. The vines are meticulously hand cropped and thinned to produce very low yields that offer exceptional quality and an intensity of fruit that sets their wines apart.

The less-is-more approach at Thirty Bench extends far beyond the vineyard. Their commitment to “Small Lot” winemaking means many of their wines are made in extremely limited numbers. How small? Check the label of their Small Lot wines and you’ll see the exact number of cases that were made for that vintage. It’s often a number so small that these cases disappear quickly. Fortunately, Thirty Bench wine lovers don’t seem to mind. As passionate Small Lot enthusiasts, they’ve discovered that the wines that are the hardest to find are also the hardest to forget.

Smoky Bitters — The Crafty Bartender

As a wine sommelier, Mark Coster’s career is based on describing taste with words, from autolytic and vegetal, to buttery and jammy. But the best he ever received about his work may have been in reference to the cocktail bitters he comments. “It’s like making out with Tom Waits,” Josh Lindley, Coster’s friend, once said, referring to the American singer-songwriter’s signature deep voice and growl-like vocals. Coster, a former bartender, began making bitters for friends as gifts. Those eventually made it to some of the city’s top bars and demand began to grow, so he launched Coster’s Prescription Bitters, a small-batch cocktail bitter company. His Coffee and A Smoke bitters were made to “echo whiskey, specifically scotch whisky.” The tobacco smoke acts as a layer of perfume, the coffee as the umami and the sweet note could fill the sugar void in a cocktail. Traditionally a soy-based product originating from Indonesia, in which the fermentation process binds the protein into a cake-like form, tempeh is taking on a distinctly North American feel at Culture City. As a producer of naturally cultured food products — from hot sauces to pickles — Damon Dewsbury says Culture City is Ontario’s only producer of soy-alternative tempehs, most of which use locally sourced ingredients such as black beans, chickpeas and sunflower seeds. Dewsbury grew up on a farm near Grand Valley, Ont., where his family raised beef cattle and chickens — a far cry from the veg-etarian products that would later become his mainstay. A mycologist by trade, essentially an expert in all things fungi, Dewsbury started making tempeh in university where he became “ultimately aware of [his] environment” and realized one of the best ways to curb climate change is by changing diets. That thinking extends far beyond the edible goods. Dewsbury strives to be eco-friendly and keep a low-carbon footprint in everything from his simple packaging, to the way he does deliveries which are often made riding his bike.

Self-proclaimed “rice baller,” Fumi Tsukamoto calls the creation of Abokichi Okazu — her company's miso, sesame, chili and garlic condiment — a “happy accident that emerged out of a labour of love.” The Japanese ex-pat was making and selling traditional style onigiri, Japanese rice balls, at local farmers’ markets when the idea came to her. Onigiri is a mainstay of Japanese fast-food found not only in every home, but also at gas stations and corner stores across the country. The okazu-flavoured onigiri proved most popular among her customers, yet Tsukamoto wasn’t happy with the chemicals and ingredients found in the imported versions of the condiment, so she decided to make her own. Okazu, which translates to rice accompaniment, is traditionally consumed as a big spoonful over rice, but Tsukamoto loves it on eggs and dumplings. And most of all she loves hearing how customers are experimenting with her product — using it in everything from muffins to hummus.

Is it a vinegar, a sweet sauce or marinade? For chef Nicholo Plaza, black maple marinade and glaze is all of these and more. The liquid is made from a secret recipe for mulled vinegar crafted by Plaza in Newmarket, Ont. He takes maple syrup originating from a single-maple orchard run by his friend in Quebec and high-quality liquid smoke sourced from south of the border. Plaza, also the director of product develop-ment at Kappa Foods, says it “brings out the natural flavours of whatever ingredient you mix it with.” The liquid is “not acidic despite it being vinegar,” Plaza explains. He added the smoke flavour because he and his team saw real southern barbecue — not the high-heat, pro-pane grilled-burger kind — was making headlines in Canada. Though Black Maple was intended to be used in the the smoker or on the grill, Plaza finds the applications to be limitless — from gravies to Caesar salad dressings, chilis to marinades. But his favourite way to use the tangy, sweet and smoky syrup is as the finisher.

For more than 60 years, Kozlik’s mustards has been family-owned and operated. What started as a small stand at the St. Lawrence Market selling mustards from grandmother Kozlik’s repertoire of recipes has grown to an extensive product line of more than 35 types of the condiment, ranging from traditional Dijon-style to balsamic fig-and-date-flavoured mustard. But after six decades, it was time to show the world what else the mighty mustard seed can do. Noah Kessler, whose family bought the business from Anton Kozlik 20 years ago, recently launched a line of mustard-based barbecue sauces and rubs. Like all of their mustards, the sauces and rubs are non-GMO, gluten-free and contain no preservatives — something customers are far more cognizant of today than they were 60 years ago. The sauces and rubs lend themselves to meats, but also root vegetables, Kessler says. The start of barbecue season is a “breath of fresh air” for him. He quips that most of his summer meals are cooked entirely on the barbecue — hold the salad.

Making ice cream this way is definitely more work but they believe it’s well worth the effort. 

Greg and Cheryl Haskett launched Udderly Ridiculous Goat Milk Ice Cream in spring 2019, inspired by the goats on their 200-acre, third-generation family farm in Oxford County, Ontario. Udderly Ridiculous Goat Milk Ice Cream is available in six sophisticated flavours at a growing number of retailers in Ontario. It all began in 2015 while writing a business plan to expand and modernize their 3rd generation family farm. As the plan unfolded a larger vision emerged. How could the farm become more than a primary producer of raw ingredients? How could they give back to the community?

Since Greg had always wanted to have a product from the farm, and Cheryl loved to cook discussions began – lots of people were venturing into cheese-making with the popularity of goat cheeses, and of course there were the soaps – however, they really wanted to bring something different, fun and something very few people were doing – Goat Milk Ice Cream.

As many businesses experienced the pandemic presented a challenge for a small new brand when there were no events, sampling or ways to interact with consumers. Udderly couldn't go to consumers so they provided what many were asking for - allowing consumers to visit the farm and engage not only with the ice cream but with goats, alpacas and in depth experiences around agriculture and food. They launched Udderly Ridiculous Farm Life July 2021 and have already won awards for their work taking home Innovator of the Year from Southwest Ontario Tourism.

So baking has been a labour of love and during the pandemic in 2020 it was made very clear that everyone loves bread. There was a need sparked by COVID and so now, they bring bread to the people.

Since they opened their doors April 2021, they have continued to renovate the building to serve customers with our baked goods, but they have mostly expanded the menu with breads, pastries, baked goods and most recently complimentary groceries.

Once upon a time...

...a long long time ago (1973) Terry Steeves, a really hard-working hippie buffalo farmer, started making beer in his summer kitchen to share with friends. After a few years the buffalo were retired, timber framing became Terry’s daytime passion. Yet, his after-hours love of crafting beer remained steadfast down through the years. In the early 1990s when the Ontario government began licensing Brew-on-Premise (BoP) beer making, Terry quickly realized it presented the perfect opportunity to share the experience of crafting personalized quality fresh small batch beer with friends and neighbours. So, in 1993 Terry moved his beer making out of his summer kitchen and Perth Brewing Company (PBC) was born.

 

A state-of-the-art small-batch brewing system was purchased from Cask Brewing Systems. As serendipity would have it, Cask Brewing was a company owned by a Calgary family that Terry’s grandfather and father had done business with many years ago.Things took off from there. Friends became customers, customers became friends, and friends of friends became customers and friends. 

 

Always looking to innovate and enhance the brewing experience customers were introduced to canning their beer in the late 1990s. This came about through the ongoing friendship and business relationship with the owners of Cask, who’d themselves worked hard to evolve the BoP experience by manufacturing single head canning seamers. Thus, PBC became the first BoP to offer customers the option to can their beer and we established ourselves as one of Canada’s largest BoPs and original craft breweries.

 

As their circle of friends and customers expanded, PBC outgrew its cozy timber-framed downtown Perth location. In 1997, the opportunity to migrate to a renovated warehouse on Highway 7 presented itself, and PBC’s new, larger home took shape, building on its recognizable craft character. Fast forward to 2013 and many memorable hours of shared beer brewing later. The broader world of microbreweries crafting unique brews was gaining traction. Never being ones to rest on our hops, 

their unwavering enthusiasm to share our beer with even more people lead to our next natural evolutionary step … the creation of Perth Brewery, sister company to PBC, a licensed microbrewery able to put cans of our freshly crafted beer directly in the hands of our friends and customers.

 

A whole new world opened up to them that they excitedly embraced bringing our PBC staff, friends and customers along. Many of these folks have been with Perth Brewery from the start and are founding members of our Loyalty Club with fun and quirky stories of their own! Recipes, like those for Last Duel Lager and Easy Amber originating in Terry’s summer kitchen back in the 1970’s hippie days and others such as Calypso IPA, were honed along the way in 50L BoP batches, earning their rightful place as flagship styles of PB.

 

Ongoing curiosity and passion shared by all of us has grown their line up to 20+ beer styles, all of which are available for free home delivery across the province of Ontario, and many of which are available at your local LCBO, grocery and Beer Store. Today, Perth Brewery's home since 1997 still sits on Highway 7 albeit several incarnations later, more fermenters have been added, their canning seamer upgraded a couple of times and ever more distinctive Terry-style timber framing accents added. With longevity and commitment to those sharing this journey comes gratitude. Gratitude for their staff,  customers and community. All of whom they gratefully call friends and family.

Redtail Vineyards was purchased in 2008 by Thomas Stallinga, from the Netherlands, Thomas has a serious passion for wine. 2023 will be the first harvest of the estate and will produce some classic and beautiful examples of PEC terroir. 

Currently, Redtail has a selection of classic wines and some natural-style wines with grapes that they have purchased from the county and Niagara. In March 2023, they hired our first full-time winemaker, Renan Theillloux, who hails from Bordeaux and has experience in Central Otago, New Zealand, and is so excited to be producing cool climate wines in the county.

Spark Beer

Spark Beer opened in 2020 with a goal to produce and serve the best hoppy, sour and Belgian influenced beers possible. Owners Andrea and John have lived in and around Chinatown for over 20 years and, after seeing the ‘for rent’ sign at 702 Somerset Street West, knew they found the home of Spark Beer. We brew beer using modern techniques, but with some classic Belgian flair.

The majority of our sour beers are aged for over four months. Their oak barrel and foeder releases are also aged from four to eighteen months. Spark releases beers when they’re ready and not a day sooner.

Spark uses as many local ingredients as possible and is working to increase that amount each time they brew. Currently, the team at Spark works with Mississippi Mill Malting for the majority of their malts. They also source some of the best Cascade and Centennial hops from Houblons Pontiac to produce a few of their favourite beers.

Reopened fully in 2022, The Eddie offers overnight accommodation options including  one of the elegant bedrooms in the 1860's Main House with 10' ceilings, or cozy chic in the  charming 2 bedroom Carriage House. 

The property features several locations for groups large and small. The original 1860s Red Barn is one of the most iconic and sought after venues in the area. Formerly known as Fields on West Lake, and now under new ownership, the property is most well known for beautiful weddings by the pond, followed by a reception in the majestic Red Barn. With 50 foot ceilings at its highest peak, and nearly 160 years old, you won't find another venue like it in The County. 

With direct access to the Millennium Trail and situated between Wellington and Bloomfield, we are ideally located for you to explore the County. But on the property they have so many other areas created for their guests to enjoy. From hammocks rocking softy at the pond's edge, to outdoor BBQ areas for you to enjoy lunch in the sun, to lounge areas overlooking the fountain, they have a number of onsite areas for guests to relax and unwind.

Waupoos Estates Winery

Located on a stunning 100 acre waterfront property, Waupoos Estates Winery was the first winery in Prince Edward County.

The vineyards were first planted in 1993 with an experimental mindset to see what would grow in this area. As the vines continued to thrive, more varieties were planted – Waupoos now has 20 acres of established vineyards growing 18 different varieties. Our wines have placed in national and international wine competitions, with the medal count growing annually.

The wine cellar and retail store were built from the ground up. The building is rich in limestone (hand picked from a quarry in Kingston ON) and officially opened in 2001. Here you can sample our award winning wines, purchase wine and wine-related gifts and don’t forget to visit the chocolate and gelato store.

As the estate matured over time, they built a beautiful restaurant by the water, nestled amongst the vineyards. Their restaurant’s focus is farm to table; they grow produce and raise proteins on the farm to offer the freshest ingredients whenever possible.
