Spirit in Niagara Small Batch Distillery was founded by Arnie Lepp, whose family has been farming for 4 generations. They care for over 200 acres of Tender Fruit, seedless grapes and vinifera grapes and are the owner of the largest single family tender fruit shipping company in Ontario, amalgamated from 5 other independent shippers.

Spirit in Niagara loves peaches, nectarines, yellow plums, blue plums, pears, apricots and cherries – the 7 major fruits in Niagara – and use these to make their special small batch spirits.

For over 40 years Craig Ferchat thrived as an influential entrepreneur, businessman, and innovator. His ultimate dream of founding a distillery was fulfilled in December of 2016 with the opening of Copperhead Distillery. Black Current Vinegar

It was half a century ago, but Pete Bradford still remembers walking into the cooler of his granfather's butchery and seeing two wooden barrels full of pig heads —only to exclaim, "Grandpa, that's what I'd like to do some day, make those barrels." But it wasn't until the closure of the General Motors plant Bradford managed in Trenton that he was able to head to Kansas to study how to make wine barrels full time. Now a master cooper, Bradford is one of ony a few left in the country.

Black martini, please

Most spirits tend to be on the clear side — or at the very least, you can see through them. But after spending many years in the bar business, Andrew Kirby, president and co-founder of Hounds Vodka based in Waterloo, wanted to create something that would “intrigue people.” By adding a proprietary blend of fulvic trace minerals and humines to triple-distilled vodka, Kirby made a black-hued spirit worthy of any martini, shaken or stirred. His favourite way to indulge is by making a Hounds Tooth: a vodka cocktail with bitters, simple syrup and just one rock.

Comfort in a Mug

The Gooderham & Worts Distillery, once known as the largest distillery in Canada, still inspires to this day — despite closing down its Distillery District location decades ago. Spirit of York, which now calls part of the old Gooderham property home, aims to honour Toronto’s proud and storied distillation history. One of the company’s core pillars is to “create world- class spirits in this world-class city,” says Gerry Guitor, president of Spirit of York.

Not Bitter At All

This time last year, Jeremiah Soucie and his wife, Sarah Waterson, alongside her brother, Michael, and his partner, Maria Hristova, took over 66 Gilead Distillery, which sits on an 80-acre heritage farm in Bloomfield, Ont. Rebranded as Kinsip House of Fine Spirits, it is more than just a craft distillery, producing grain-based spirits — vodka, gin, whisky and shōchū. Soucie and his partners have been busy carefully creating new recipes for their growing line of bitters — the alcohol-based, botanically infused flavouring agents that were historically used for medicinal purposes.
