Come make some miso with a homesteader from the mountain side of Japan!

In this workshop we will cover:

  • Introduction on how to grow koji culture yourself
  • What is miso and the different types
  • How to make and ferment miso paste
  • Soybean and using alternative beans
  • Different ways to use miso

Other details:

  • You will take home with you 1kg of miso to ferment at home
  • We will be using organic, non-gmo soybeans
  • Light food will be provided

Things to bring:

  • Potato masher (only if you already have one, not a must!)
  • Container to take home 1kg of miso
  • Pen and paper to take notes

 

Let's mash some beans while geek out over chats about ferments, traditional food processing techniques, decolonizing the soybean, life in rural Japan, ancestral food ways, food resiliency and so much more!
