Place the cabbage into a large bowl. Sprinkle with the salt. Using clean hands, toss and lightly massage the cabbage, about 2 minutes; set aside. In a small bowl, whisk together the lemon zest, lemon juice and mustard. Slowly whisk in the oil until emulsified. Whisk in the honey and pepper. Stir the apple in with the cabbage. Add the vinaigrette and toss well to combine. Adjust seasonings as needed.
