Cabbage and Apple Slaw with Lemon Vinaigrette

This slaw is composed of cabbage and apple and topped with a lemon vinaigrette bringing out its true spring flavors.

Place the cabbage into a large bowl. Sprinkle with the salt. Using clean hands, toss and lightly massage the cabbage, about 2 minutes; set aside. In a small bowl, whisk together the lemon zest, lemon juice and mustard. Slowly whisk in the oil until emulsified. Whisk in the honey and pepper. Stir the apple in with the cabbage. Add the vinaigrette and toss well to combine. Adjust seasonings as needed.

  • 3 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1/2 tsp sea salt, plus more if needed
  • 1 tsp finely grated lemon zest
  • 2 tbsp freshly squeezed lemon juice
  • 1/2 tsp Dijon mustard
  • 3 tbsp extra virgin olive oil
  • 1 tsp  liquid honey
  • 1/2 tsp freshly grated black pepper, plus more if needed
  • 1/2  large sweet apple, cored and julienned (cut into matchsticks)
