Roasted Garlic and Cheddar Biscuits

The addition of roasted garlic and cheddar cheese to the biscuit dough takes this side dish up two notches. Try these served with the Green Garlic and Sourdough Soup.

Ingredients

  • 1 1/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup roasted garlic cloves, chopped
  • 1/3 cup butter, cold, cut into small pieces
  • 1 cup cheddar cheese, shredded
  • 1 cup buttermilk (or 1 cup milk with 2 tablespoons vinegar)

Cooking

Preheat your oven to 375F.

In a mixing bowl, stir together the flour, baking powder and salt. Add the cold butter and mix together until it is all the consistency of coarse crumbs. Add the roasted garlic and cheddar. Stir lightly until mixed. Add the buttermilk and stir until all the dry dough has been incorporated.

Break off equal portions of the dough and drop them onto a parchment-lined baking sheet. Bake the biscuits on the middle rack of your oven. For large biscuits (6), bake for 18 to 22 minutes. For smaller biscuits (8 or more), cook for 12 to 15 minutes. Once baked, remove from the oven and allow to cool for about five minutes before eating.
