Mint Cocktails — A Champagne Mule and a Mojito

Blood Orange Sparkling Mule — makes 1 glass

½ medium blood orange, juiced
½ lime, juiced
1 ounce vodka
8 fresh mint leaves
2 ounces ginger beer, chilled
sparkling wine for topping

In a glass, combine the blood orange juice, lime juice and vodka. Muddle with mint leaves, setting one aside to garnish the glass. Add the ginger beer and top with the sparkling wine. Garnish with blood orange slices and fresh mint.

 

Kombucha Mojito — makes 1 cocktail

1 lime cut into wedges
8 to 12 fresh mint leaves
1 to 3 tablespoons simple syrup (1 part sugar, 1 part water boiled until the sugar dissolves, then cooled) or cane sugar
2 ounces rum (optional)
1 bottle of kombucha, for topping
crushed iced

To the bottom of a glass, add 4 lime wedges, the mint leaves and the simple syrup or sugar.

Using a muddler or even the end of a rolling pin or other kitchen tool, muddle the lime, mint and syrup together (squish everything together) to release the flavours.

Fill half the glass with ice and then add the rum (optional), stirring until the sugar is fully dissolved.

Top the glass with a little more ice and then pour kombucha over everything and gently stir to combine. Garnish with fresh mint.
