Kelsey Ramage, an award-winning bartender and co-founder of Trash Tiki, a popular international anti-waste pop-up and collective, is seen behind the bar at Supernova Ballroom, her latest venture.
Supernova Ballroom focuses on seasonality and sustainable waste practices in its food and drink menus. Drinks can include ingredients initially destined for the trash bin, such as citrus husks, coffee grounds and discarded pineapple skins.
Supernova Ballroom is located in the Financial District at Bay and Adelaide, inside a renovated building designed by Chapman & Oxley in 1926, the same firm that worked on the Royal Ontario Museum and the Princes’ Gates.
