According to Cindy Mueller, owner of Canadian Ginger Co., growing ginger is easy until harvest — the delicate roots have to be removed washed and packaged by hand to avoid breaking them into small pieces.
The Canadian Ginger Co. is located in Fisherville, just south of Hamilton, but Mueller sells to chefs through 100km Foods Inc. The green shoots of the ginger root are edible and can be used in stir-fries or simply steeped in hot water for tea.
Cindy Mueller shows off her pink ginger harvested inside the farm’s greenhouse.
Mueller has a master's of science in horticulture from the University of Guelph and she’s currently studying to become a registered holistic nutritionist at the Canadian School of Natural Nutrition. After graduating in 2020, she plans to host nutrition workshops and cooking classes.
