While legalization of recreational marijuana is expected this year, approval of edible cannabis will take more time. In the meantime, bakers are showing consumers how to incorporate marijuana into their own kitchens.
Baking with cannabis often relies on making an infusion with the plant and butter, commonly referred to as “cannabutter.”
Before using it, many bakers dry their cannabis in the oven on low-heat allowing it to undergo a process called decarboxylation. This allows the THC in the plant to be fully activated before it is steeped in butter.
According to cannabis bakers, cannabutter can be used the same way you'd use regular butter in any baking recipe, such as Brown's chocolate cookies and Canabiscotti's biscotti.
However, they caution to start with a small dose as the reaction to a cannabis edible may be very different than that of smoking marijuana.
