Flavoured Fruit Syrups Makes 2 cups
Try these flavour combinations: cranberry and rosemary, pear and ginger, blueberry and vanilla bean, plum and cardamom.
3 cups of cranberries, chopped pears or your favourite fruit (fresh or frozen)
1 cup of sugar (granulated, honey or maple syrup)
1 cup of water
Optional: 1 to 2 sprigs of herbs, such as rosemary, thyme or a vanilla bean, a cinnamon stick, cardamom pods or 3 looniesized slices of ginger
Prepare the fruit by washing and cutting it as needed. Place all of the ingredients in a medium-sized pot place over medium heat. Bring the mixture to a boil and remove from heat once the sugar has dissolved. In a mixing bowl, strain the mixture through a fine-mesh sieve and pour into clean bottles with tight-fitting lids.
To make soda = 2 parts sparkling water + 1 part syrup + 1 lime wedge + ice To make a morning mimosa = 1 part syrup + 2 parts sparkling wine + 1 part freshly squeezed orange juice
