The National Arts Centre's mission has always been to nurture and promote performing artists throughout Canada. In the same spirit, the Resident Chef Program was introduced by 1 Elgin Restaurant in 2019 as a way of sharing Canada's brightest culinary talent with the rest of the country, and the world. 

Working closely with NAC executive chef, Kenton Leier, participating chefs have created beautiful events and cooking demonstrations, menus for 1 Elgin Restaurant and invited culinary students into the NAC kitchen to work with them and gain some real-world experience in one of Canada's most prestigious kitchens.

Back Forty Artisan Cheese

Founded in 2000, Back Forty is a small creamery and cheese shop located on a farm in the hamlet of Mississippi Station Ontario where cheesemaker Jeff Fenwick hand-crafts artisanal cheeses of the highest quality. Back Forty’s original raw ewe milk cheeses have grown into a local favorite and have become loved and trusted by many of the province's top chefs and cheese lovers alike.

Using traditional old-world methods and 100% natural unpasteurized sheep’s milk, each cheese is made by hand in small batches and then carefully tended to and aged from two to 12 months. In their petite fromagerie they produce six ewe’s milk cheeses: Flower Station, Madawaska, Bonnechere, Highland Blue, Ompah, and Pecorino Verona. In 2018 Back Forty started making cheeses with raw water buffalo milk and introduced the new Calabogie Blue Cheese and Little Antoines.

The Back Forty farm is home to the dairy, cheese shop, and riverside bistro and is located in Mississippi Station, Ontario, an hour west of Ottawa. The shop offers a full selection of our raw-sheep’s milk cheeses, as well as a range of locally made products including cured meats, honey, maple syrup, chocolate, coffee beans, preserves, and Back Forty’s own farm raised grass-fed organic lamb, Highland Beef, and whey-fed pork.

The outdoor live fire kitchen and riverside bistro serve a seasonal farm-to-table menu, including wood-oven pizzas, salads, and tasting boards, and the licensed riverside patio features Ontario craft beer, cider, and wine.  All the produce used in the menu is grown in Back Forty’s organic garden and the meats are all raised on farm, including organic chicken, lamb, Highbeef, and pork.

The Cheese Shop and Bistro is open every Friday and Saturday 11:30-7 from June 16th to Labour Day with a rotating seasonal farm-to-table menu. It’s casual outdoor dining riverside at picnic tables, muskoka chairs, and bar.

Flora Hall Brewing

Flora Hall Brewing is a neighbourhood gathering place designed from the ground up to welcome and delight customers with delicious beer and food and warm service, all in a striking setting. 

Founder Dave Longbottom spent decades travelling the globe in other ventures, always seeking out the best local taverns and watering holes and sampling the drink, food and hospitality on offer. Flora Hall is the synthesis of these experiences, launched to provide Ottawa with a unique new drinking and eating locale, and built to last. 

After rescuing the derelict structure at 37 Flora St. in 2016, an extensive, year-long transformation began. The renovation is built upon and complements the building’s long and familiar heritage as an engineering warehouse and office. All the work was completed by local trades and craftspeople. 

Flora Hall's beer is made in their 18 hectolitre, two-vessel brewhouse, including one bright tank and five single fermentation tanks. They produce a variety of beer styles made with quality ingredients and the careful attention of their talented brewers.

The kitchen at Flora Hall produces creative and contemporary takes on classic comfort foods from around the globe, with ingredients sourced locally and seasonally. The food complements drinking and conversation, perfect for snacking and sharing over an afternoon or evening of conviviality.

The folks at Brookers Cider add nothing artificial to their ciders: no sulphites, no finings, no concentrates, no yeast. They start with certified organic wild apples and that is often where it ends. If we they add anything, they add only locally grown fruits or botanicals, or locally produced honey or syrup.

Loch Mór Cider Co.

Loch Mór Cider blends contain carefully selected heritage and cider varieties, which are pressed on site and fermented slowly at low temperatures. Many of their ciders are bottle conditioned, creating the natural, fine stream of bubbles. Some are fermented naturally with wild/house culture yeast & others are inoculated with strains of wine yeast. 

The folks at Loch Mór Cider Co. like their cider full of flavour and not full of sugar. They leave our cider “full juice”, which means we can provide you with a drier (lower sugar) cider with the full flavour. Cider judges also agree – their ciders have won awards for two years in a row, including for their fortified cider, Pommeau, which has won twice.

Most of their bee colonies make way more honey than they need so they can safely remove some without harming them. Honsberger Estate Winery

The Honsberger Family are sixth generation farmers and they have been farming since 1811. Therefore, the heritage and history of the land has been in the Honsberger family for years.

In 2007, cherry trees were removed to plant Cabernet Franc and apple trees removed to plant riesling. Currently, there are 8 acres of Cabernet Franc (near Jordan Road) and 3 acres of Reisling (near the back of the property, directly across from the tasting room). In 2012, the family decided to hold back a portion of their 11 acres of grape production to make their own wine.

Henry of Pelham’s 300-acre vineyard is located in the Short Hills Bench sub-appellation of the Niagara Peninsula. 

The Short Hills Bench is the most easterly of the sub-appellations located within the Niagara Escarpment. It encompasses the land rising up from the plain of the peninsula south of Regional Road 81 to the Escarpment Brow and situated between Twelve Mile Creek and Fifteen Mile Creek.

The undulating hills and valleys of the Short Hills, which rest on an ancient buried valley that once cut through the Niagara Escarpment and connected the basins Lake Ontario and Lake Erie, provide long gentle slopes with excellent drainage and sun exposure. The warm sunny days and cool nights characteristic of this area are perfect for developing the intense grape flavours derived from its complex soils. All the grapes for Henry of Pelham Estate and Speck Family Reserve wines are grown in the Short Hills Bench sub-appellation.

One thing unites every VQA wine produced by Henry of Pelham: the land. Their family has lived on it for generations, and their vines have been putting down deep roots in St. Catharines, Ontario for decades. From full-bodied Baco Noir to rich Chardonnay, our wines capture this unique connection to our corner of Niagara.

Their name must be a typo. Maybe they’re so Canadian they didn’t want to commit to calling their cider Rude? The fact is, Rood is Dutch for red. Red: because this cider is basically the love child of 5 different delicious red apples. But why Dutch? Creekside, where we make their cider, is in the village of Jordan Station which was founded by the Pennsylvania Dutch. Long story short, they weren’t really Dutch. They were German. And the German word for red is rot. Rot Apples isn’t exactly mouth-watering. So, Dutch it is. There you have it.

Camino maple hot chocolate, created by La Siembra Cooperative, relies on small-scale farming operations for its organic and fair-trade ingredients. Hot chocolate was the first product launched by the co-op back in 1999, so it’s “always been near and dear to our hearts,” says Mélanie Broguet, Camino's manager of product development. With organic maple sugar from Citadelle, a maple syrup producer co-operative in Quebec, cocoa producer co-ops in the Dominican Republic and a sugar producer in Paraguay, the vegan friendly drink is sweater-weather ready for all.

It was only a matter of time before the years Christine Manning spent as a child in her Italian mother’s kitchen would influence her career. While on a break between marketing jobs, Manning and her husband James planted a vegetable garden and were rewarded with a bumper crop. Manning canned those vegetables, joined a farmers’ market and launched Manning Canning. When it was time to grow, Manning was faced with the challenge of finding adequate commercial kitchen space. After a successful Kickstarter campaign in 2014, Manning opened her own commercial kitchen in Toronto’s Leaside neighbourhood that now hosts 40 small food businesses in addition to her own. Made with cold-pressed juice from Ontario apples, the delicately flavoured apple Earl Grey jelly had a couple of inspirations — tea time with James’ parents in the U.K. and an apple and earl grey martini Manning fell in love with in New York.

Bad Apple Brewing Company is owned and run by the Ingram family. Jason and Sarah Ingram were raised in Huron County. They have always loved living by Lake Huron and wanted to raise their two children here as well. In 2011, when a property with a beautiful house and century barn, on a 4.9 acre orchard came up for sale and was just a 10 minute walk from the lake, they decided to make it their forever home. They saw all the potential the property had and spent the first three years learning to care for the property and playing around with ideas of what they could do with it.

Jason and his father Sandy both had a passion for home brewing and during those first three years they planted all different kinds of fruit they could experiment with in their home brews: more apple trees, cherry trees, black and red currents and 5 different varieties of grapes. Jason also began building his own home brewing system and haven in the barn. Jason liked the idea of brewing his creations for others. Sarah enjoyed caring for the orchard and liked the idea of opening a farm gate store to sell the apples as well as other local products. In the end, both ideas turned into what is now Bad Apple Brewing Company.

Bad Apple Brewing Company opened in 2014 as a ferment on premises (also known as a U-Brew). Jason had been home brewing for years and wanted to teach his passion for home brewing to others. He had turned his little brewing haven in the barn into a business. You could say Bad Apple is a business literally born in a barn!  In fact, that is what we called one of our first beers! Brewing was fun and something he really enjoyed doing as a side business from his full time job as a sheet metal foreman and estimator. The decision to switch licensing to a Beer Manufacturer allowing Bad Apple Brewing Company to function as a micro or craft brewery was made once Jason was able to increase the size of his brewhouse. He also had many customers coming in asking if they could buy product by the bottle which he was not able to do under the ferment on premises license.

It was September 2016 when Jason and Sarah officially received the new license for Bad Apple, and the business started to function as a craft brewery. Their flagship beer was West Coast White, a wheat beer spiced with a hint of cardamom. It is still one of their best sellers.

In 2018, they were able to grow their brewhouse again. This new brewhouse provided the ability to brew 15 hectolitre batches- still considered small batch, craft beer but greatly increasing the brewhouse output. So after installing the brewhouse himself, Jason made the difficult decision to quit his sheet metal career and go full time as the brewer and president of Bad Apple Brewing Company. Jason enjoys seeing people enjoying his beer creations, talking beer, and telling stories. He also loves giving tours and still loves teaching about the brewing process.

Through the years Jason has worked at perfecting a variety of craft beer recipes. Including the West Coast White, Jim’s Juicy IPA, Apple Blossom Honey Brown, Snappy Apple Sour, Black Monday Dunkelweizen, Irish Red Ale and Bannock Burn Scottish Ale.  He also brews for some local neighbouring businesses in St. Joseph’s. Hessenland Inn asked Jason to brew their Hessenland Helles which has become one of the most popular beers sold at Bad Apple as well as at Hessenland.  He also was asked in 2020 to brew a light lager for the White Squirrel Golf Club, called the Swinging Squirrel- another popular favourite available at the Golf club or at Bad Apple.

Sarah Ingram, Vice President of Bad Apple Brewing Company still likes to focus on caring for the orchard and gardens but also manages the advertising, social media and event planning side of the business. Sarah opened the orchard as a ‘you pick’ business in 2014 and to this day if you want the experience of picking your own fresh apples off the tree, you can come to Bad Apple in September or October and pick. Only now you can also enjoy a beer while you’re out picking your apples!  Sarah also ran with her idea of having a store that sells local products. When you come to Bad Apple you can shop for the latest craft beers they have to offer as well as support other local companies by picking up their coffee, kombucha, meat sticks, hot sauce, maple syrup, spices, charcuterie boards and the list is always growing! Sarah loves helping to organize inventory, choosing what swag to purchase next, and putting on events for the community and Bad Apple patrons. She loves seeing people enjoying themselves and sharing in their passion for great beer, relaxing atmosphere and the beautiful scenery of the Bad Apple Orchard, she likes to call the Bad Apple Badlands!

Jason and Sarah both see the potential for Bad Apple to be a community hub.  This vision really came to light in the summer of 2020 when people needed a safe place to reunite with their family after the first COVID lockdown.  Picnic tables were spread throughout the orchard giving people a place to meet safely with their social circle.  It started with Father’s Day weekend and multiple families commenting that their meeting at Bad Apple was the first time they had seen each other in 4 months, as well as the first time they had really ‘gone out’.  This encouraged the couple to give people more of what they seemed to need: a fun, safe place to enjoy with their friends and family. They brought in food trucks, live music, campfires, and Yoga and Brew in the orchard.

Chef Jose Hadad got his first taste of professional cooking at the age of 17. But it was long before then that he became hooked on being a chef, all thanks to his grandmothers. He watched them meticulously make dishes from the simplest ingredients while growing up in Mexico City. Fast forward to 2006, Hadad arrived in Toronto, bought himself a small table at the St. Lawrence Market and started selling fresh, authentic Mexican products. It was half a century ago, but Pete Bradford still remembers walking into the cooler of his granfather's butchery and seeing two wooden barrels full of pig heads —only to exclaim, "Grandpa, that's what I'd like to do some day, make those barrels." But it wasn't until the closure of the General Motors plant Bradford managed in Trenton that he was able to head to Kansas to study how to make wine barrels full time. Now a master cooper, Bradford is one of ony a few left in the country. When he started his coopering business in 2006, he and his wife, Maria, used vinegars to experiment with the different flavours various types of wood would impart on the wine. With a Gamay base blended with a Riesling reduction and fresh black currants from Brighton, Ont., Bradford's popular raw black currant vinegar is aged for 17 years before it hits the shelf. Perfect on pork tenderloin or as an aperitif, this vinegar is acidic up front with a mouthful of flavour. And Bradford's favourite way to enjoy it is blended into melted chocolate and slathered on ribs.

Most spirits tend to be on the clear side — or at the very least, you can see through them. But after spending many years in the bar business, Andrew Kirby, president and co-founder of Hounds Vodka based in Waterloo, wanted to create something that would “intrigue people.” By adding a proprietary blend of fulvic trace minerals and humines to triple-distilled vodka, Kirby made a black-hued spirit worthy of any martini, shaken or stirred. His favourite way to indulge is by making a Hounds Tooth: a vodka cocktail with bitters, simple syrup and just one rock. Kirby’s father, who spent 20 years in the spir-it industry, was a source of inspiration and encouragement — “he knew that nothing like this existed.” The minerals — derived from humus, or degraded organic matter — serve two purposes. They add the deep-black hue to the vodka and provide a velvety, smooth finish, creating an “incredible ingredient for the creative bartender.”

The Gooderham & Worts Distillery, once known as the largest distillery in Canada, still inspires to this day — despite closing down its Distillery District location decades ago. Spirit of York, which now calls part of the old Gooderham property home, aims to honour Toronto’s proud and storied distillation history. One of the company’s core pillars is to “create world- class spirits in this world-class city,” says Gerry Guitor, president of Spirit of York. That’s reflected in the whisky, made from 100-per -cent rye grain, aged in new oak barrels for three years and proofed with water from Springwater, Ont., which Guitor argues is the purest water in the world. His favourite way to enjoy the whisky is in a Sazerac, Boulevardier or straight up on the rocks. But in this cold weather, he suggests trying an East of the Delta — a cocktail named after a popular canoe route used by French settlers in the 1700s, now known as the Humber River. It includes cinnamon and clove, warm apple cider and Spirit of York rye whisky.

Crispy Apple Chips

One of the original Mennonite families to settle in the Waterloo region, the Martins have been farming their land since the 1820s. But it wasn’t until the 1970s that Leighton Martin, at the urging of an exchange student, planted his first 100 apple trees alongside his mixed vegetable gardens. Fast forward forty years and the Martin's Family Fruit Farm now harvests apples from more than 700 acres of orchards in southern Ontario. In 2012, the family took another leap of faith by jumping into the value-added market, building a fruit processing plant to produce their own line of apple chips. With four flavours available — original, cinnamon, chocolaty drizzle and caramel dream — the Martins process up to 25,000 apples a day to keep up with demand for their apple chips. Though they grow more than 25 varieties of apples, they prefer the Royal Gala apple's perfect combination of sweetness and firmness to make their crispy chips.

First skeptical of his mother-in-law’s home-brewed kombucha, it took Michael Doehle a week of drinking it to become a convert. And his mother-in-law’s passed-down SCOBY (symbiotic culture of bacteria and yeast) laid the foundation for VAMS Culture, the company he founded with his wife Vanessa Montemurro in their Parkdale home in 2010. VAMS, which stands for Vanessa and Michael, is now a line of distinct superfood-based kombuchas and eye-popping fluorescent-hued kefir waters. Kefir water uses a culture introduced to Doehle as Japanese water crystals, which he says resemble gummy bears. According to Doehle, they “do their magic from the bottom of the brew” as opposed to kombucha cultures, which ferment from the top down. Aside from being good for you, VAMS just looks good. The vibrant colours come about naturally. In Ambient Space, a blue-pigmented kefir water, the colour comes from what Doehle calls blue majik, an organic and wild-grown algae. Though it may share its colour palette with Kool-Aid, VAMS is a good-for-you and nutrient-rich thirst quencher.

After moving to a 95-acre farm in Fergus, Ont., with her husband, Mija Kosir, Elizabeth Burrows felt what she describes as a “re-energized love of food” — especially tree nuts. This appreciation for nuts inspired Burrows to experiment with different flavour combinations by roasting her favourite nuts with fresh fruits and hand-grated spices. These experiments quickly turned into a business idea. The newly opened Drake Commissary is the fourth installment in the Drake enterprise and the one, chef Jonas Grupiljonas says brings the Drake back to its foundation. Housed in an old 8,000-squarefoot industrial building, the commissary is the Drake’s new bakeryrestaurant- bar-larder culinary hub that also serves as the production kitchen for its other locations. But for Grupiljonas, it’s a space to collaborate with his peers and put their philosophy of making everything from scratch to work. “It’s about taking the things I’ve learned from the slow fermentation process when baking bread and applying that to everything we make. Slowly and properly and then "scaling that up,” maintains Grupiljonas ultimately creates a unique selection of small batch products. A trio of small-batch sauces — Thai chili sauce, Chipotle ketchup and Lot No. 40 whisky-infused barbecue sauce — from the Drake's larder would make a saucy little Christmas gift.

Garlic Beer Jelly

Some people say their best ideas come to them over a pint of beer. For Terry Coughlan and Lorna Fyfe, it was the beer itself that provided inspiration for a line of beer jellies, made with award-winning beer from Publican House Brewery in Peterborough. All her life, Fyfe, who grew up on a farm near Port Hope, has been making preserves. Boiling, canning and jellying became second nature — but even her trained palate had no expectation of just how good the beer jellies would be. Encouraged by the initial product, she and Coughlan experimented by adding garlic to the jelly. “It was a hit from the start,” he says, adding that pairing beer and garlic “just made good sense.” Free of preservatives or additives, the Jus-Jellin condiment is perfect as a simple cheese-and-cracker spread, but pairs equally well with chicken, pork, wild game and even poached eggs. As for concerns about garlic breath? “We haven’t had any complaints… so I guess we’re all safe,” says Coughlan.

GoodLot Farmstead Brewing Co.

GoodLot is an organic hop farm and a solar-powered brewery creating fresh ales and lagers using hyper-local ingredients known as #farmraisedbeer.

Gail and Phil Winters purchased Goodlot in 2009 and soon determined that organic hop farming would be their pursuit.  In 2011 they established their first test plot of 125 plants. That same year they helped co-found the Ontario Hop Growers Association.

In 2013, they built another hop yard and planted an additional 1500 rhizomes, all the while growing naturally and eventually harnessing regenerative farming methods (ie:use sheep for grazing).

GoodLot Farmstead Brewing was launched in 2017, creating ales and lagers using their own hops and/or supplementing with 100% Ontario hops. Their beer can be found at select LCBO’s across Ontario.  Alternatively, their farm is open to the public with a tasting facility/retail store, beer gardens, a 14 hole disc golf course and an on-site Food Truck.

The folks at GoodLot are community builders, striving to expand the circle for all to share. They love creating deeper connections with their neighbours, other farmers and brewers, and are seriously grateful for good beer, good laughs and the dirt under their nails.

Hessenland Inn & Schatz Winery

Steeped in history, Hessenland Inn marries two intriguing stories.  The first story belongs to the farm itself and dates back to the late 19th century when it was owned by the Bedard Family who were one of the first families to settle in the area.  The original Bedard farm house still stands today and is attached to the Inn’s main building.  In 1998 the farm’s barn was torn down to its original foundation and carefully restored to what is today, The Coach House.  This rustic yet elegant barn-like setting has become one of the most unique reception venues along Ontario’s West Coast.

The second story began in Germany, in the province of Hessen more than thirty years ago and belongs to Ernst and Christa Ihrig.  They dreamed of moving to Canada to open a business which combined their passion for hospitality with their hobby of horse breeding.  Hessenland today now boasts expansive gardens, dining rooms, accommodations, 5 acres of vineyard and the unique Coach House reception hall.

Today the Inn is run by the second generation of Ihrigs.  Frank (the eldest son of Ernst and Christa) along with his wife Liz have taken over as co-owners.
